Forget the filet mignon! When you want a really amazing steak to wow guests, you need to try petite sirloin steak. It's more affordable than a filet and it's perfect for company.

You can use your favorite marinade and cook it on the grill or sear it in a pan with Cowboy Butter. Either way, you're going to love it.

Today, I'm going to share with you how I make grilled petite sirloin steak with our tasty Cowboy Steak Rub, which is especially good on beef.  This blend has a sweet and smoky heat that's really delicious.

There's a little kick from the chili powder and cayenne pepper and the smokiness comes from cumin, coriander and paprika.  What you might not expect is that this spice rub also includes brown sugar and coffee. It definitely packs a punch!

What temperature does steak need to be?

For example, USDA recommends a minimum temp of steak to be 145°F and allow to rest for at least 3 minutes, which is considered "medium." This is how Mr. Juggling Act likes his steaks. I prefer mine a little more done so I look for 155°F.  I love that the iGrill Mini use Bluetooth to connect to my phone. It's really easy to know when to remove the steak from the grill.

How To Grill Petite Sirloin Steak

  1. Start by adding the olive oil, Cowboy Steak Rub and Worcestershire on the raw meat. Refrigerate for at least 2 hours, for maximum flavor, 24 hours is best.
  2. Remove the steaks from the fridge and let set out for 30 minutes before cooking.
  3. Discard any leftover marinade.
  4. Preaheat the grill to 400°F - or medium-high heat if you are using a grilling pan.
  5. Place beef onto the grill.
  6. Cook for 3-5 minutes per side, depending on your "doneness" preference.
  7. Use a meat thermometer to check the temperature, then remove from the heat, cover with tinfoil and let rest at least 5 minutes - however 10 minutes is best.

How long to grill steak:

This depends largely on how you like your beef cooked.

  • 4 minutes per side for medium-rare
  • 5 minutes per side for medium
  • 6 minutes for medium-well

Another great rub for steaks is our Homemade Montreal Seasoning Mix. In all honesty, this petite steak is so good that it won't take much for them to taste really fabulous!  You'll find that our Cowboy Butter is also truly amazing on these steaks as well.

How to Pan Sear Petite Sirloin

  1. Start by adding the olive oil, Cowboy Steak Rub and Worcestershire on the meat. Refrigerate for at least 2 hours, for maximum flavor, 24 hours is best.
  2. Remove the steaks from the fridge and let set out for 30 minutes before cooking and discard any leftover marinade.
  3. Heat a cast iron skillet until it's very hot over medium-high heat, then add ½ tablespoon of olive oil to the skillet.
  4. Add the steaks to the skillet. In order to achieve a nice sear, do not move the steaks around. Let sear for about 4 minutes on the first side.
  5. Flip the steaks and cook for an additional 4-6 minutes, depending on your desired doneness,
  6. Remove to a cutting board and cover with tinfoil for 10 minutes, allowing the steaks to rest before slicing.

For best results with pan-seared steak:

  1. When the second side of the steaks have cooked for 3 minutes, add 2 tablespoons of our Cowboy Butter to the skillet.
  2. Once the butter is melted, slightly tilt the pan so that you can easily scoop it to spoon over the steaks.
  3. Continue spooning the melted butter over the steaks for about 1 minute.

Petite sirloin is a less expensive cut than top sirloin steaks, partially because it's a smaller cut of sirloin steak. Top sirloin is more tender than petite sirloin.

Is petite sirloin tough?

Petite sirloin is a tougher cut than filet or tenderloin because it comes from the lower half of the cow - also known as the loin region of the cow.
